Easy Egg Cups
Ingredients
4 eggs
1/3 cup low-fat cottage cheese
1/4 cup salsa or pico de gallo
1/4 cup shredded mozzarella cheese
Instructions
Preheat oven to 350°F.
Whisk together the eggs and cottage cheese until well blended.
Spray a muffin tin with nonstick cooking spray and divide the egg mixture evenly among the cups.
Bake for 12 minutes.
Remove from the oven and add 1 tablespoon of salsa or pico de gallo to each egg cup. Top with 2 teaspoons of shredded mozzarella.
Bake for another 10–12 minutes, until the eggs are set and the cheese is lightly golden.
Let cool and enjoy!
